Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Green onions - 2, sliced
- Mixed vegetables - 2 cups (e.g., bell peppers, carrots, broccoli)
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Vegetable oil - 1 tablespoon
- Sesame oil - 2 tablespoons
- Soy sauce - 1/4 cup
- Extra firm tofu - 1 block, cubed
- Soba noodles - 8 ounces
Let's Get Started
- Cook the soba noodles according to the package instructions. Drain and set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the tofu cubes and cook until golden brown on all sides.
- In a small bowl, mix together the soy sauce, sesame oil, garlic, and ginger. Pour this sauce over the tofu and stir to coat.
