  1. Cook the soba noodles according to the package instructions. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the tofu cubes and cook until golden brown on all sides.
  3. In a small bowl, mix together the soy sauce, sesame oil, garlic, and ginger. Pour this sauce over the tofu and stir to coat.
  4. Add the mixed vegetables to the pan and stir-fry until they are tender.
  5. Add the cooked soba noodles to the pan and toss everything together until the noodles are well coated in the sauce.
  6. Serve the noodle bowls topped with sliced green onions and a sprinkle of sesame seeds.
