Fava Bean Soup

Ingredients - Serves 6

Let's Get Started

  1. Rinse the dried fava beans and soak them in water overnight. Drain and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion, carrot, celery, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.
  4. Add the soaked fava beans, vegetable broth, diced tomato, bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the fava beans are tender.
  6. Remove the bay leaf and discard.
  7. Using an immersion blender or a regular blender, puree the soup until smooth.
  8. Return the soup to the pot and heat over low heat until warmed through.
  9. Serve the fava bean soup hot, garnished with fresh parsley.
