Fava Bean Soup
This hearty fava bean soup is packed with flavors and nutritious ingredients.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Tomato - 1, diced
- Vegetable broth - 4 cups
- Garlic - 3 cloves, minced
- Celery stalk - 1, chopped
- Carrot - 1, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Dried fava beans - 1 cup
Let's Get Started
- Rinse the dried fava beans and soak them in water overnight. Drain and set aside.
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrot, celery, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.
- Add the soaked fava beans, vegetable broth, diced tomato, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the fava beans are tender.
- Remove the bay leaf and discard.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and heat over low heat until warmed through.
- Serve the fava bean soup hot, garnished with fresh parsley.
