Fava Bean and Tomato Bruschetta
This delicious bruschetta is made with fresh fava beans, ripe tomatoes, and crusty bread.
Ingredients - Serves 4
- Baguette - 1, sliced
- Salt and pepper - To taste
- Balsamic vinegar - 1 tablespoon
- Extra virgin olive oil - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Fava beans - 1 cup, shelled
Let's Get Started
- Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Set aside.
- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well.
- Add the shelled fava beans to the tomato mixture and toss to combine.
- Preheat the oven to 400°F.
- Place the baguette slices on a baking sheet and brush with olive oil. Toast in the oven for 5-7 minutes, or until golden brown.
- Remove the toasted baguette slices from the oven and let them cool slightly.
- Top each slice with the fava bean and tomato mixture.
- Serve immediately and enjoy!
