Fava Bean and Pecorino Salad
This refreshing salad combines fresh fava beans, pecorino cheese, and a tangy lemon dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh mint leaves - 1/4 cup, chopped
- Extra virgin olive oil - 2 tablespoons
- Lemon - 1, juiced
- Pecorino cheese - 1/2 cup, grated
- Fava beans - 2 cups, shelled

- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes, until tender. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Discard the skins.
