  1. In a large bowl, beat the egg whites until stiff peaks form.
  2. Gradually add the sugar, continuing to beat until the mixture is glossy and holds its shape.
  3. In a large saucepan, bring the milk to a simmer over medium heat.
  4. Drop spoonfuls of the egg white mixture into the milk and cook for about 2 minutes on each side, until puffed and lightly golden.
  5. Using a slotted spoon, transfer the cooked 'islands' to a serving dish.
  6. Stir the vanilla extract, cinnamon, and lemon zest into the remaining milk in the saucepan and simmer for a few more minutes.
  7. Pour the flavored milk over the 'islands' and refrigerate until chilled before serving.
