  2. In a large bowl, combine the ricotta cheese, sugar, eggs, flour, baking powder, vanilla extract, lemon zest, and salt. Mix until smooth.
  3. Fold in the diced pears.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake for about 1 hour, or until the cake is golden and a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then remove the sides of the pan and let it cool completely on a wire rack.
  7. Serve the cake at room temperature, dusted with powdered sugar if desired.
