Empanadas de Chiverre
Empanadas de Chiverre are traditional Costa Rican pastries filled with sweet spaghetti squash jam. They are typically enjoyed during Holy Week.
Ingredients - Serves 12
- Salt - 1/2 teaspoon
- Eggs - 2
- Butter - 1 cup
- All-purpose flour - 3 cups
- Lemon zest - 1 tablespoon
- Cloves - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Sugar - 2 cups
- Chiverre squash - 1 medium
Let's Get Started
- Cut the chiverre squash in half and remove the seeds. Cook in boiling water until soft. Drain and let cool.
- Once the squash is cool, shred it and mix with the sugar, cinnamon, cloves, and lemon zest. Cook over low heat until it becomes a thick jam.
- In a separate bowl, mix the flour, butter, eggs, and salt. Knead until a dough forms.
- Roll out the dough and cut into circles. Place a spoonful of the chiverre jam in the center of each circle.
- Fold the dough over the filling and seal the edges with a fork.
- Bake at 350°F for 15-20 minutes, or until golden brown.
