Torta Di Mandorle Siciliana
A traditional Sicilian almond cake, perfect for dessert or a sweet breakfast treat.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 tablespoon
- Eggs - 4, separated
- Sugar - 1 cup
- Almonds - 2 cups, blanched and finely ground
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch round cake pan.
- In a large bowl, combine the ground almonds and sugar.
- Add the egg yolks, lemon zest, and vanilla extract. Mix until well combined.
- In a separate bowl, beat the egg whites and salt until stiff peaks form.
- Gently fold the egg whites into the almond mixture until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack.
- Before serving, dust the cake with powdered sugar.
