  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.
  2. In a large bowl, combine the ground almonds and sugar.
  3. Add the egg yolks, lemon zest, and vanilla extract. Mix until well combined.
  4. In a separate bowl, beat the egg whites and salt until stiff peaks form.
  5. Gently fold the egg whites into the almond mixture until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack.
  9. Before serving, dust the cake with powdered sugar.
