Farro Mafaldine with Black Truffle Butter and Mushrooms
This is a luxurious pasta dish featuring farro mafaldine, black truffle butter, and mushrooms. The earthy flavors of the truffle and mushrooms perfectly complement the nutty, hearty farro pasta.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Mixed mushrooms - 2 cups, sliced
- Black truffle butter - 4 tablespoons
- Farro mafaldine - 12 ounces
Let's Get Started
- Cook the farro mafaldine in a large pot of boiling salted water until al dente. Drain, reserving 1 cup of the pasta water.
- While the pasta is cooking, melt the truffle butter in a large skillet over medium heat.
- Add the mushrooms and cook until they are golden and crispy, about 10 minutes.
- Add the garlic to the skillet and cook until fragrant, about 1 minute.
- Pour in the wine and let it simmer until it has almost completely evaporated.
- Add the cooked pasta to the skillet and toss to combine. If the pasta seems dry, add some of the reserved pasta water.
- Season with salt and pepper, then stir in the grated Parmesan cheese.
- Serve the pasta in bowls, garnished with the chopped parsley.
