Falafel Pita Sandwich
This delicious falafel pita sandwich is packed with flavorful falafel balls, fresh vegetables, and creamy tahini sauce.
Ingredients - Serves 2
- Tahini sauce - 1/4 cup
- Lettuce - A handful
- Cucumber - 1/2, sliced
- Tomato - 1, sliced
- Pita bread - 2 rounds
- Vegetable oil - For frying
- All-purpose flour - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, chopped
- Dried chickpeas - 1 cup
Let's Get Started
- Soak the dried chickpeas in water overnight. Drain and rinse well.
- In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, black pepper, baking powder, and all-purpose flour. Pulse until well combined and the mixture holds together.
- Transfer the falafel mixture to a bowl and refrigerate for 1 hour to firm up.
- Heat vegetable oil in a deep pan or skillet over medium heat.
- Shape the falafel mixture into small balls and carefully drop them into the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove from the oil and drain on a paper towel-lined plate.
- Warm the pita bread rounds in a toaster or oven.
- Cut the pita bread in half and open the pocket.
- Stuff each pita half with falafel balls, sliced tomato, cucumber, lettuce, and drizzle with tahini sauce.
- Serve the falafel pita sandwiches immediately and enjoy!
