Edamame Falafel Sandwiches
These delicious and healthy sandwiches are made with edamame falafel, fresh vegetables, and a tangy tahini sauce.
Ingredients - Serves 4
- Tahini sauce - 1/2 cup
- Cucumber - 1, sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Whole wheat pita bread - 4 pieces
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cumin - 1 teaspoon
- Lemon juice - 2 tablespoons
- Cilantro - 1 cup
- Garlic - 2 cloves
- Edamame - 2 cups, shelled and cooked
Let's Get Started
- In a food processor, combine the edamame, garlic, cilantro, lemon juice, cumin, salt, and pepper. Process until smooth.
- Form the mixture into small patties and place them on a baking sheet.
- Bake at 375°F for 15 minutes, or until the patties are golden and crispy.
- Warm the pita bread in the oven for a few minutes.
- To assemble the sandwiches, spread some tahini sauce on each pita, then add a lettuce leaf, a few slices of tomato and cucumber, and a couple of falafel patties.
- Fold the pita over the fillings and serve.
