Let's Get Started

  1. In a food processor, combine the edamame, garlic, cilantro, lemon juice, cumin, salt, and pepper. Process until smooth.
  2. Form the mixture into small patties and place them on a baking sheet.
  3. Bake at 375°F for 15 minutes, or until the patties are golden and crispy.
  4. Warm the pita bread in the oven for a few minutes.
  5. To assemble the sandwiches, spread some tahini sauce on each pita, then add a lettuce leaf, a few slices of tomato and cucumber, and a couple of falafel patties.
  6. Fold the pita over the fillings and serve.
