Ewedu Soup
Ewedu soup is a traditional Nigerian soup made with jute leaves and commonly served with a variety of Nigerian dishes.
Ingredients - Serves 6
- Palm oil - 2 tablespoons
- Water - 4 cups
- Salt - To taste
- Onion - 1 medium-sized, chopped
- Pepper - 2-3 scotch bonnet peppers
- Crayfish - 2 tablespoons, ground
- Locust beans (iru) - 2 tablespoons
- Ewedu leaves - 2 bunches
Let's Get Started
- Wash the ewedu leaves thoroughly and remove any tough stems.
- Place the leaves in a pot with water and boil for about 10 minutes until the leaves are soft.
- Using a blender or a wooden spoon, blend or mash the leaves until they become slimy.
- In a separate pot, heat the palm oil and sauté the chopped onions and pepper for a few minutes.
- Add the locust beans (Iru) and crayfish to the pot and stir well.
- Pour in the mashed ewedu leaves and stir continuously for about 5 minutes.
- Add salt to taste and simmer for another 5 minutes.
- Serve hot with your choice of swallow (e.g., amala, eba, or pounded yam).
