Atama Soup
This hearty Atama Soup is a traditional Nigerian dish made with palm fruit extract, assorted meat, and vegetables.
Ingredients - Serves 6
- Water - 6 cups
- Seasoning cubes - 2
- Salt - To taste
- Ugu leaves - 2 cups, chopped
- Uziza leaves - 1/2 cup, chopped
- Scotch bonnet pepper - 2, chopped
- Bell pepper - 1 medium, chopped
- Onion - 1 medium, chopped
- Palm oil - 1/4 cup
- Crayfish - 2 tablespoons
- Smoked fish - 100g
- Dried fish - 100g
- Stockfish - 100g
- Assorted meat (beef, goat, or chicken) - 500g
- Palm fruit extract - 2 cups
Let's Get Started
- In a large pot, boil the assorted meat, stockfish, and dried fish until tender.
- Remove the meat and fish from the pot and set aside.
- In a separate pot, heat the palm oil and sauté the chopped onion, bell pepper, and scotch bonnet pepper for 3-4 minutes.
- Add the palm fruit extract to the pot and cook for 10 minutes, stirring occasionally.
- Add the boiled meat and fish back to the pot.
- Pour in the water and bring to a boil.
- Add the crayfish, seasoning cubes, and salt. Stir well.
- Reduce the heat and let the soup simmer for 30 minutes.
- Add the chopped uziza leaves and ugu leaves to the pot and cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot and enjoy!
