Arroz de Hauçá
Arroz de Hauçá is a traditional Nigerian dish that has been adapted in Brazil. It's a flavorful rice dish made with dried shrimp, vegetables, and spices.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Black pepper - To taste
- Salt - To taste
- Palm oil - 2 tablespoons
- Tomatoes - 2, chopped
- Green bell pepper - 1, chopped
- Red bell pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Dried shrimp - 1 cup
- Long grain rice - 2 cups
Let's Get Started
- Rinse the rice under cold water until the water runs clear. Set aside.
- Soak the dried shrimp in warm water for 15 minutes, then drain and set aside.
- In a large pot, heat the palm oil over medium heat. Add the onion, garlic, bell peppers, and tomatoes. Cook until the vegetables are soft, about 10 minutes.
- Add the rice to the pot and stir to coat in the oil and vegetables. Cook for 2-3 minutes.
- Add the dried shrimp, salt, and pepper to the pot. Stir to combine.
- Add enough water to the pot to cover the rice by about 1 inch. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the water is absorbed.
- Fluff the rice with a fork and stir in the chopped cilantro. Serve hot.
