Acarajé
Acarajé is a traditional Brazilian street food made from black-eyed peas formed into a ball and then deep-fried in palm oil. It is typically filled with vatapá, a spicy paste made from shrimp, coconut milk, and nuts.
Ingredients - Serves 4
- Vatapá - For filling
- Palm oil - For frying
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Black-eyed peas - 2 cups, soaked overnight
Let's Get Started
- Drain the black-eyed peas and remove the skins. This can be done by rubbing the peas between your hands.
- In a food processor, combine the black-eyed peas, onion, garlic, and salt. Process until a thick paste forms.
- Heat the palm oil in a deep fryer or large pot to 375°F.
- Using wet hands, form the pea mixture into balls and then flatten them slightly.
- Fry the acarajé in the hot oil until they are golden brown, about 5 minutes.
- Drain the acarajé on paper towels.
- Cut a slit in each acarajé and fill with vatapá. Serve hot.
