Let's Get Started

  1. Drain the black-eyed peas and remove the skins. This can be done by rubbing the peas between your hands.
  2. In a food processor, combine the black-eyed peas, onion, garlic, and salt. Process until a thick paste forms.
  3. Heat the palm oil in a deep fryer or large pot to 375°F.
  4. Using wet hands, form the pea mixture into balls and then flatten them slightly.
  5. Fry the acarajé in the hot oil until they are golden brown, about 5 minutes.
  6. Drain the acarajé on paper towels.
  7. Cut a slit in each acarajé and fill with vatapá. Serve hot.
