Acarajé Com Vatapá
Acarajé com Vatapá is a traditional Brazilian dish from Bahia. It's a deep-fried ball of black-eyed pea dough filled with vatapá, a rich and spicy shrimp paste.
Ingredients - Serves 4
- Salt - To taste
- Red pepper - 1, chopped
- Cashews - 1/2 cup, roasted and ground
- Peanuts - 1/2 cup, roasted and ground
- Coconut milk - 1 cup
- Bread crumbs - 1 cup
- Palm oil - 1 cup
- Dried shrimp - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Black-eyed peas - 2 cups, soaked overnight
Let's Get Started
- In a food processor, blend the soaked black-eyed peas, onion, and garlic until smooth.
- Heat the palm oil in a deep fryer or large pot to 375°F.
- Form the pea mixture into balls and deep-fry until golden brown, about 5 minutes. Drain on paper towels.
- To make the vatapá, combine the dried shrimp, bread crumbs, coconut milk, peanuts, cashews, and red pepper in a blender. Blend until smooth.
- Transfer the vatapá to a saucepan and cook over medium heat, stirring constantly, until thickened. Season with salt.
- Cut a slit in each acarajé and fill with the vatapá. Serve hot.
