Entomatadas
Entomatadas are a delicious Mexican dish made with tortillas, cheese, and a savory tomato sauce.
Ingredients - Serves 4
- Salt - To taste
- Vegetable oil - For frying
- Queso fresco - 1 cup, crumbled
- Corn tortillas - 8
- Jalapeno - 1, seeded and chopped
- Onion - 1/2, chopped
- Garlic - 2 cloves
- Tomatoes - 4 large
Let's Get Started
- In a blender, combine the tomatoes, garlic, onion, jalapeno, and salt. Blend until smooth.
- Heat a small amount of oil in a pan over medium heat. Add the tomato mixture and cook for 10 minutes, or until the sauce has thickened.
- In a separate pan, heat the vegetable oil over medium-high heat. Fry the tortillas one at a time until soft, then drain on paper towels.
- Dip each tortilla in the tomato sauce, then fill with queso fresco and fold in half.
- Serve the entomatadas warm, topped with any remaining sauce and additional queso fresco.
