Ensalada de Papas
A traditional Spanish potato salad, perfect for picnics and potlucks.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Red bell pepper - 1, finely chopped
- Green bell pepper - 1, finely chopped
- Red onion - 1 small, finely chopped
- Mayonnaise - 1/2 cup
- Potatoes - 6 medium, peeled and cubed
Let's Get Started
- Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Drain the potatoes and let them cool.
- In a large bowl, combine the mayonnaise, red onion, green bell pepper, red bell pepper, salt, and pepper.
- Add the cooled potatoes to the bowl and toss to coat.
- Sprinkle with the chopped parsley before serving.
