Enchiladas de Aguacate
Enchiladas de Aguacate are delicious avocado-filled enchiladas topped with a flavorful salsa verde.
Ingredients - Serves 4
- Sour cream - 1/4 cup
- Queso fresco - 1/2 cup, crumbled
- Salt - To taste
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Salsa verde - 2 cups
- Corn tortillas - 8
- Avocados - 2, ripe
Let's Get Started
- Preheat the oven to 375°F.
- In a bowl, mash the avocados with a fork until smooth. Season with salt and lime juice.
- In a separate pan, heat a small amount of oil over medium heat. Soften the corn tortillas by quickly frying them for about 10 seconds on each side.
- Spread a spoonful of mashed avocado onto each tortilla and roll them up tightly.
- In a saucepan, heat the salsa verde over medium heat. Add the chopped onion, minced garlic, and chopped cilantro. Cook for 5 minutes, stirring occasionally.
- Pour half of the salsa verde mixture into a baking dish.
- Place the rolled enchiladas in the baking dish, seam side down.
- Pour the remaining salsa verde mixture over the enchiladas.
- Sprinkle queso fresco on top.
- Bake in the preheated oven for 15 minutes, or until the enchiladas are heated through and the cheese is melted.
- Serve hot, garnished with a dollop of sour cream and additional chopped cilantro, if desired.
