Enchiladas de Aguacate

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a bowl, mash the avocados with a fork until smooth. Season with salt and lime juice.
  3. In a separate pan, heat a small amount of oil over medium heat. Soften the corn tortillas by quickly frying them for about 10 seconds on each side.
  4. Spread a spoonful of mashed avocado onto each tortilla and roll them up tightly.
  5. In a saucepan, heat the salsa verde over medium heat. Add the chopped onion, minced garlic, and chopped cilantro. Cook for 5 minutes, stirring occasionally.
  6. Pour half of the salsa verde mixture into a baking dish.
  7. Place the rolled enchiladas in the baking dish, seam side down.
  8. Pour the remaining salsa verde mixture over the enchiladas.
  9. Sprinkle queso fresco on top.
  10. Bake in the preheated oven for 15 minutes, or until the enchiladas are heated through and the cheese is melted.
  11. Serve hot, garnished with a dollop of sour cream and additional chopped cilantro, if desired.
