Empanadas de Lechon
These delicious pork empanadas are a traditional Argentine dish, perfect for any occasion.
Ingredients - Serves 12
- Egg - 1, beaten
- Empanada dough - 12 discs
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Bell peppers - 2, finely chopped
- Onions - 2, finely chopped
- Pork shoulder - 1 lb, cooked and shredded
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onions, bell peppers, and garlic and cook until soft, about 5 minutes.
- Add the shredded pork, salt, and pepper and cook for another 5 minutes.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place a spoonful of the pork mixture in the center of each empanada disc.
- Fold the dough over the filling to create a half-moon shape and crimp the edges to seal.
- Brush the empanadas with the beaten egg.
- Bake for 20-25 minutes, or until golden brown.
