Let's Get Started

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and cook until softened and translucent.
  3. Add the carrots, potatoes, cabbage, green beans, beef broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
  4. Add the sliced smoked sausage to the pot and simmer for an additional 10 minutes.
  5. Remove the bay leaf and season with additional salt and pepper if needed.
  6. Serve the German Eintopf hot, garnished with the crispy bacon.
