Eintopf
This hearty German Eintopf is a delicious one-pot meal filled with vegetables, meat, and flavorful broth.
Ingredients - Serves 6
- Smoked sausage - 1 pound, sliced
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Beef broth - 6 cups
- Green beans - 1 cup, trimmed and halved
- Cabbage - 1/2 small head, shredded
- Potatoes - 4 medium, diced
- Carrots - 2 large, sliced
- Onion - 1 large, diced
- Bacon - 4 slices, chopped
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened and translucent.
- Add the carrots, potatoes, cabbage, green beans, beef broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
- Add the sliced smoked sausage to the pot and simmer for an additional 10 minutes.
- Remove the bay leaf and season with additional salt and pepper if needed.
- Serve the German Eintopf hot, garnished with the crispy bacon.
