Eight Treasure Rice Pudding
Eight-Treasure Rice Pudding is a traditional Chinese dessert made from glutinous rice and eight different fruits and nuts.
Ingredients - Serves 8
- Water - 4 cups
- Sugar - 1 cup
- Sesame seeds - 1/2 cup
- Walnuts - 1/2 cup
- Peanuts - 1/2 cup
- Candied winter melon - 1/2 cup
- Dried longan - 1/2 cup
- Lotus seeds - 1/2 cup
- Red jujubes - 1/2 cup
- Glutinous rice - 2 cups
Let's Get Started
- Soak the glutinous rice in water for 4 hours, then drain.
- Cook the rice in a rice cooker with 4 cups of water.
- While the rice is cooking, soak the red jujubes, lotus seeds, dried longan, candied winter melon, peanuts, walnuts, and sesame seeds in water for 30 minutes, then drain.
- Mix the soaked fruits and nuts with sugar.
- When the rice is cooked, spread half of it in a large bowl.
- Spread the fruit and nut mixture over the rice, then cover with the remaining rice.
- Steam the pudding over high heat for 1 hour.
- Let the pudding cool before cutting into pieces and serving.
