Ingredients - Serves 6

Let's Get Started

  1. Grind the egusi seeds in a blender or food processor until smooth.
  2. Heat the palm oil in a large pot over medium heat.
  3. Add the chopped onions and sauté until translucent.
  4. Add the assorted meat, stockfish, and dry fish. Cook for about 10 minutes, or until the meat is browned.
  5. Add the ground egusi seeds and stir well to combine with the meat.
  6. Add water to the pot, enough to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  7. Add the crayfish, seasoning cubes, salt, and pepper. Stir well and simmer for another 10 minutes.
  8. Add the chopped ugu leaves and spinach. Stir well and cook for an additional 5 minutes.
  9. Taste and adjust the seasoning if needed.
  10. Serve hot with your choice of swallow (e.g., pounded yam, eba, or fufu).
