Egbono Soup
Egusi soup is a popular Nigerian dish made with ground melon seeds and various vegetables.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Seasoning cubes - 2
- Spinach - 2 cups, chopped
- Ugu (pumpkin) leaves - 2 cups, chopped
- Crayfish - 2 tablespoons
- Dry fish - 2 medium-sized pieces
- Stockfish - 1 medium-sized piece
- Assorted meat (beef, chicken, or goat) - 1 pound
- Onions - 1 medium, chopped
- Palm oil - 1/2 cup
- Egusi (melon) seeds - 1 cup
Let's Get Started
- Grind the egusi seeds in a blender or food processor until smooth.
- Heat the palm oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the assorted meat, stockfish, and dry fish. Cook for about 10 minutes, or until the meat is browned.
- Add the ground egusi seeds and stir well to combine with the meat.
- Add water to the pot, enough to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the crayfish, seasoning cubes, salt, and pepper. Stir well and simmer for another 10 minutes.
- Add the chopped ugu leaves and spinach. Stir well and cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, eba, or fufu).
