  1. In a large bowl, combine the warm water and yeast. Let sit for 5 minutes until the yeast is dissolved.
  2. Add the flour, 2 tablespoons of the olive oil, and the salt to the yeast mixture. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour, until it has doubled in size.
  5. While the dough is rising, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the onions and garlic and cook until they are soft and golden.
  6. Add the crushed tomatoes, anchovies, oregano, and pepper to the skillet. Simmer the sauce for about 15 minutes, until it has thickened.
  7. Preheat your oven to 425°F (220°C).
  8. Punch down the dough and spread it out on a greased baking sheet. Spread the tomato sauce over the dough, then sprinkle it with the breadcrumbs.
  9. Bake the sfincione for about 20 minutes, until the crust is golden and the sauce is bubbling. Let it cool for a few minutes before slicing and serving.
