Sfincione
Sfincione is a Sicilian pizza that has a thick, spongy dough topped with tomatoes, onions, anchovies, and a sprinkling of breadcrumbs. It's a traditional dish often served during the holidays.
Ingredients - Serves 8
- Pepper - 1/2 teaspoon
- Oregano - 1 teaspoon
- Breadcrumbs - 1/2 cup
- Anchovy fillets - 8, chopped
- Canned tomatoes - 1 can (28 ounces), crushed
- Garlic - 4 cloves, minced
- Onions - 2, finely chopped
- Salt - 2 teaspoons
- Olive oil - 1/4 cup
- All-purpose flour - 4 cups
- Active dry yeast - 2 1/4 teaspoons
- Warm water - 1 1/2 cups
Let's Get Started
- In a large bowl, combine the warm water and yeast. Let sit for 5 minutes until the yeast is dissolved.
- Add the flour, 2 tablespoons of the olive oil, and the salt to the yeast mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic.
- Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour, until it has doubled in size.
- While the dough is rising, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the onions and garlic and cook until they are soft and golden.
- Add the crushed tomatoes, anchovies, oregano, and pepper to the skillet. Simmer the sauce for about 15 minutes, until it has thickened.
- Preheat your oven to 425°F (220°C).
- Punch down the dough and spread it out on a greased baking sheet. Spread the tomato sauce over the dough, then sprinkle it with the breadcrumbs.
- Bake the sfincione for about 20 minutes, until the crust is golden and the sauce is bubbling. Let it cool for a few minutes before slicing and serving.
