Onion and Carrot Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, carrots, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the vegetable broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce the heat to low and let the soup simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree it that way.
  6. Serve the soup hot, with a sprinkle of fresh thyme on top if desired.
