Onion and Carrot Soup
A hearty and healthy soup made with onions, carrots, and a blend of spices. Perfect for a cold day.
Ingredients - Serves 4
- Thyme - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Carrots - 4, peeled and chopped
- Onions - 2, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, carrots, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the vegetable broth, salt, pepper, and thyme. Bring to a boil.
- Reduce the heat to low and let the soup simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree it that way.
- Serve the soup hot, with a sprinkle of fresh thyme on top if desired.
