Edamame Pesto Pasta
A fresh and healthy twist on traditional pesto pasta, using edamame beans for a protein-packed, vibrant and delicious meal.
Ingredients - Serves 4
- Pasta - 400 grams
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Olive oil - 1/4 cup
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves
- Basil leaves - 1 cup
- Edamame beans - 1 cup, shelled and cooked
Let's Get Started
- In a food processor, combine the edamame beans, basil, garlic, and lemon juice. Pulse until finely chopped.
- With the motor running, slowly add the olive oil until well combined.
- Add the Parmesan cheese, salt, and pepper and pulse until smooth.
- Cook the pasta according to the package instructions. Drain, reserving 1 cup of the pasta water.
- Toss the pasta with the edamame pesto, adding pasta water as needed to loosen the sauce.
- Serve the pasta with extra Parmesan cheese on top.
