Edamame Fritters
These delicious and healthy edamame fritters are perfect as a snack or appetizer. They are crispy on the outside and soft on the inside.
Ingredients - Serves 4
- Vegetable oil - For frying
- Salt and pepper - To taste
- Flour - 1/2 cup
- Egg - 1
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Edamame - 2 cups, shelled and cooked
Let's Get Started
- In a food processor, combine the edamame, green onions, garlic, egg, flour, salt, and pepper. Pulse until the mixture is combined but still chunky.
- Heat the vegetable oil in a large skillet over medium heat.
- Using a tablespoon, scoop the edamame mixture into the skillet and flatten with the back of the spoon.
- Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the skillet and drain on paper towels.
- Serve the edamame fritters warm with your favorite dipping sauce.
