Edamame Corn Chowder
A hearty, vegetarian chowder that combines the fresh flavors of sweet corn and edamame in a creamy broth.
Ingredients - Serves 4
- Chopped fresh parsley - For garnish
- Salt and pepper - To taste
- Milk - 1 cup
- Potatoes - 2 medium, diced
- Vegetable broth - 4 cups
- Edamame - 1 cup, shelled
- Fresh corn kernels - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the corn, edamame, vegetable broth, and potatoes. Bring to a boil.
- Reduce the heat to low and simmer until the potatoes are tender, about 15 minutes.
