Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Avocado - 1 large, diced
- Edamame - 2 cups, shelled
- Potatoes - 4 medium, cubed
Let's Get Started
- Boil the potatoes in a large pot of salted water until tender, about 10 minutes. Drain and set aside.
- In the same pot, boil the edamame for 5 minutes. Drain and set aside.
- In a large bowl, combine the potatoes, edamame, and diced avocado.
