Double Boiled Chicken Soup

Let's Get Started

  1. Clean the chicken and remove any excess fat. Cut the chicken into large pieces.
  2. Peel the ginger and smash it with the side of a knife. Peel the garlic cloves.
  3. Rinse the red dates and goji berries under cold water.
  4. Place the chicken, ginger, garlic, red dates, and goji berries in a large pot.
  5. Pour in the water and bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 2 hours.
  6. After 2 hours, strain the soup through a fine mesh sieve into a clean pot. Discard the solids.
  7. Season the soup with salt to taste and serve hot.
