Double Boiled Chicken Soup
A nourishing and comforting soup made by double boiling chicken with herbs and vegetables.
Ingredients - Serves 4
- Salt - To taste
- Water - 2 liters
- Goji berries - 1 handful
- Red dates - 10
- Garlic - 6 cloves
- Ginger - 1 piece, about 2 inches
- Whole chicken - 1, about 1.5kg
Let's Get Started
- Clean the chicken and remove any excess fat. Cut the chicken into large pieces.
- Peel the ginger and smash it with the side of a knife. Peel the garlic cloves.
- Rinse the red dates and goji berries under cold water.
- Place the chicken, ginger, garlic, red dates, and goji berries in a large pot.
- Pour in the water and bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 2 hours.
- After 2 hours, strain the soup through a fine mesh sieve into a clean pot. Discard the solids.
- Season the soup with salt to taste and serve hot.
