Dinakdakan

Ingredients - Serves 6
- Green onions - 2 tablespoons, chopped (for garnish)
- Calamansi juice - 2 tablespoons
- Black pepper - To taste

- Mayonnaise - 1/4 cup
- Vinegar - 1/4 cup
- Green chili peppers - 2 pieces, finely chopped
- Onion - 1 medium, finely chopped
- Pork belly - 1 cup, boiled and grilled
- Pig's ears - 2 cups, boiled and grilled
Let's Get Started
- Boil the pig's ears and pork belly until tender. Drain and grill until slightly charred. Let them cool, then chop into small pieces.
- In a bowl, combine the chopped pig's ears, pork belly, onions, and green chili peppers.
- Add vinegar, mayonnaise, salt, black pepper, and calamansi juice. Mix well to combine.
- Refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve chilled and garnish with chopped green onions.
