  1. Peel the sweet potatoes and cut into 1/2 inch thick slices.
  2. Heat the vegetable oil in a deep fryer or large saucepan to 350°F (175°C).
  3. Fry the sweet potatoes until they are golden brown, about 5 minutes. Drain on paper towels.
  4. In a small saucepan, combine the sugar and water. Bring to a boil, then reduce the heat and simmer until the sugar is dissolved.
  5. Add the soy sauce to the sugar syrup and stir to combine.
  6. Add the fried sweet potatoes to the saucepan and stir to coat with the syrup.
  7. Sprinkle with sesame seeds before serving.
