Daigaku Imo
Daigaku Imo is a popular Japanese snack and dessert, made with sweet potatoes that are fried and coated in a sweet syrup.
Ingredients - Serves 4
- Black sesame seeds - 1 tablespoon
- Soy sauce - 1 tablespoon
- Water - 1/2 cup
- Sugar - 1/2 cup
- Vegetable oil - For frying
- Sweet potatoes - 2 large
Let's Get Started
- Peel the sweet potatoes and cut into bite-sized pieces.
- Heat the vegetable oil in a deep fryer or large pot to 350°F.
- Fry the sweet potatoes until they are golden brown and crispy, about 5-7 minutes. Remove from the oil and drain on paper towels.
- In a small saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is dissolved.
- Add the soy sauce to the sugar syrup and stir to combine.
- Add the fried sweet potatoes to the saucepan and stir to coat in the syrup.
- Sprinkle with black sesame seeds before serving.
