  1. Peel the sweet potatoes and cut into bite-sized pieces.
  2. Heat the vegetable oil in a deep fryer or large pot to 350°F.
  3. Fry the sweet potatoes until they are golden brown and crispy, about 5-7 minutes. Remove from the oil and drain on paper towels.
  4. In a small saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is dissolved.
  5. Add the soy sauce to the sugar syrup and stir to combine.
  6. Add the fried sweet potatoes to the saucepan and stir to coat in the syrup.
  7. Sprinkle with black sesame seeds before serving.
