Curry Udon is a delicious Japanese noodle dish made with thick udon noodles and a flavorful curry broth.
Ingredients - Serves 2
- Green onions - 2, chopped (for garnish)
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken or vegetable broth - 4 cups
- Potato - 1, diced
- Carrot - 1, thinly sliced
- Onion - 1, thinly sliced
- Curry roux - 2 blocks
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a large pot, heat some oil over medium heat. Add the sliced onion, carrot, and potato. Cook until the vegetables are slightly softened.
- Add the chicken or vegetable broth to the pot and bring to a boil. Reduce the heat and simmer for about 10 minutes, or until the vegetables are cooked through.
