Curried Couscous Salad with Dried Cranberries and Edamame
A flavorful and healthy salad with a hint of curry, sweet dried cranberries, and protein-packed edamame.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Edamame - 1 cup, shelled and cooked
- Dried cranberries - 1/2 cup
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Curry powder - 1 tablespoon
- Couscous - 1 cup
Let's Get Started
- In a medium saucepan, bring 1 1/2 cups of water to a boil. Stir in the couscous and curry powder, cover, and remove from heat. Let stand for 5 minutes.
- In a large bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Fluff the couscous with a fork and add it to the bowl with the dressing. Toss to combine.
- Add the dried cranberries, edamame, and parsley to the bowl and toss to combine.
- Serve the salad at room temperature or chilled.
