Curanto
Curanto is a traditional Chilean dish made with a variety of meats, seafood, and vegetables, cooked in a hole in the ground.
Ingredients - Serves 8
- Pepper - To taste
- Salt - To taste
- Cilantro - 1/2 cup, chopped
- Cabbage - 1 head, quartered
- Bell peppers - 2, sliced
- Onions - 4, sliced
- Sweet potatoes - 4, peeled and halved
- Potatoes - 8, peeled and halved
- Clams - 2 pounds
- Mussels - 2 pounds
- Chorizo sausages - 8
- Chicken thighs - 2 pounds
- Beef brisket - 2 pounds
- Pork ribs - 2 pounds
Let's Get Started
- Dig a hole in the ground, approximately 3 feet deep and 4 feet wide.
- Build a fire in the hole and let it burn until you have a bed of hot coals.
- Layer the meats, seafood, and vegetables in the hole, starting with the pork ribs, beef brisket, and chicken thighs.
- Add the chorizo sausages, mussels, and clams on top.
- Place the potatoes, sweet potatoes, onions, bell peppers, and cabbage on the top layer.
- Cover everything with banana leaves or aluminum foil.
- Cover the hole with dirt, making sure no steam can escape.
- Let the curanto cook for about 4 hours.
- Carefully uncover the hole and remove the cooked curanto.
- Garnish with chopped cilantro and season with salt and pepper to taste.
- Serve hot and enjoy!
