Ingredients - Serves 8

Let's Get Started

  1. Dig a hole in the ground, approximately 3 feet deep and 4 feet wide.
  2. Build a fire in the hole and let it burn until you have a bed of hot coals.
  3. Layer the meats, seafood, and vegetables in the hole, starting with the pork ribs, beef brisket, and chicken thighs.
  4. Add the chorizo sausages, mussels, and clams on top.
  5. Place the potatoes, sweet potatoes, onions, bell peppers, and cabbage on the top layer.
  6. Cover everything with banana leaves or aluminum foil.
  7. Cover the hole with dirt, making sure no steam can escape.
  8. Let the curanto cook for about 4 hours.
  9. Carefully uncover the hole and remove the cooked curanto.
  10. Garnish with chopped cilantro and season with salt and pepper to taste.
  11. Serve hot and enjoy!
