Cua Rang Me
Cua Rang Me is a Vietnamese dish made with crispy fried crab coated in tamarind sauce.
Ingredients - Serves 4
- Roasted peanuts - 1/4 cup, crushed (for garnish)
- Green onions - 2, chopped (for garnish)
- Vegetable oil - 1 cup, for frying
- Cornstarch - 2 tablespoons
- Red chili peppers - 2, sliced
- Shallots - 2, thinly sliced
- Garlic - 4 cloves, minced
- Fish sauce - 2 tablespoons
- Sugar - 2 tablespoons
- Tamarind paste - 2 tablespoons
- Crab - 2 lbs, cleaned and cracked
Let's Get Started
- In a small bowl, mix together tamarind paste, sugar, fish sauce, and 1/4 cup of water to make the tamarind sauce.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic, sliced shallots, and sliced red chili peppers to the pan. Stir-fry for 1-2 minutes until fragrant.
- Add the cleaned and cracked crab to the pan. Stir-fry for 5-7 minutes until the crab turns red and is cooked through.
- Pour the tamarind sauce over the crab in the pan. Stir-fry for another 2-3 minutes until the crab is coated in the sauce.
- In a small bowl, mix cornstarch with 2 tablespoons of water to make a slurry. Add the slurry to the pan and stir-fry for another minute until the sauce thickens.
- Remove the pan from heat and transfer the Cua Rang Me to a serving dish.
- Garnish with chopped green onions and crushed roasted peanuts.
- Serve hot with steamed rice or crusty bread.
