  1. Preheat your oven to 350°F (175°C).
  2. Rinse the duck inside and out and pat dry with paper towels.
  3. Rub the duck all over with the salt, crushed Szechuan peppercorns, and five-spice powder.
  4. Place the duck on a rack in a roasting pan and roast in the preheated oven for 1 hour.
  5. While the duck is roasting, make the Szechuan sauce. In a small saucepan, combine the minced garlic, minced ginger, soy sauce, rice vinegar, and sugar. Bring to a simmer over medium heat.
  6. Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes.
  7. After 1 hour, increase the oven temperature to 400°F (200°C) and roast the duck for an additional 30 minutes, or until the skin is crispy and the meat is cooked to your desired level of doneness.
  8. Let the duck rest for 10 minutes before carving. Serve with the Szechuan sauce.
