Crispy Szechuan Duck

Ingredients - Serves 4
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons water
- Sugar - 2 tablespoons
- Rice vinegar - 1/4 cup
- Soy sauce - 1/2 cup
- Fresh ginger - 1 inch piece, minced
- Garlic - 3 cloves, minced
- Five-spice powder - 1 teaspoon
- Szechuan peppercorns - 1 tablespoon, crushed
- Salt - 1 tablespoon
- Whole duck - 1 (4 to 5 pounds)
Let's Get Started
- Preheat your oven to 350°F (175°C).
- Rinse the duck inside and out and pat dry with paper towels.
- Rub the duck all over with the salt, crushed Szechuan peppercorns, and five-spice powder.
- Place the duck on a rack in a roasting pan and roast in the preheated oven for 1 hour.
- While the duck is roasting, make the Szechuan sauce. In a small saucepan, combine the minced garlic, minced ginger, soy sauce, rice vinegar, and sugar. Bring to a simmer over medium heat.
- Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes.
- After 1 hour, increase the oven temperature to 400°F (200°C) and roast the duck for an additional 30 minutes, or until the skin is crispy and the meat is cooked to your desired level of doneness.
- Let the duck rest for 10 minutes before carving. Serve with the Szechuan sauce.
