Crema Catalana
Crema Catalana is a Spanish custard dessert similar to crème brûlée. This creamy dessert is topped with a thin layer of hard caramel, with a custard base which is traditionally flavored with lemon or orange zest, and cinnamon.
Ingredients - Serves 4
- Sugar for caramelizing - 4 tablespoons
- Lemon zest - 1 tablespoon
- Cinnamon stick - 1
- Cornstarch - 1 tablespoon
- Egg yolks - 4
- Sugar - 1/2 cup
- Milk - 2 cups
Let's Get Started
- In a saucepan, combine the milk, sugar, cinnamon stick, and lemon zest. Bring to a boil, then remove from heat and let infuse for 1 hour.
- In a bowl, whisk together the egg yolks and cornstarch.
- Gradually whisk in the infused milk, then return the mixture to the saucepan.
- Cook over low heat, stirring constantly, until the mixture thickens into a custard.
- Pour the custard into 4 ramekins and let cool.
- Refrigerate for at least 2 hours, or until set.
- Before serving, sprinkle each ramekin with 1 tablespoon of sugar. Use a kitchen torch to caramelize the sugar, or place the ramekins under a broiler until the sugar is caramelized.
