  1. In a saucepan, combine the milk, sugar, cinnamon stick, and lemon zest. Bring to a boil, then remove from heat and let infuse for 1 hour.
  2. In a bowl, whisk together the egg yolks and cornstarch.
  3. Gradually whisk in the infused milk, then return the mixture to the saucepan.
  4. Cook over low heat, stirring constantly, until the mixture thickens into a custard.
  5. Pour the custard into 4 ramekins and let cool.
  6. Refrigerate for at least 2 hours, or until set.
  7. Before serving, sprinkle each ramekin with 1 tablespoon of sugar. Use a kitchen torch to caramelize the sugar, or place the ramekins under a broiler until the sugar is caramelized.
