Sachsische Eierschecke
Sächsische Eierschecke is a traditional German cake from Saxony, consisting of three layers: a yeast dough at the bottom, a layer of quark (curd cheese), vanilla and lemon in the middle, and a layer of butter, sugar and eggs on top.
Ingredients - Serves 12
- Lemon zest - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Quark (curd cheese) - 2 cups
- Butter - 1/2 cup
- Eggs - 4
- Flour - 3 cups
- Sugar - 1 cup
- Milk - 1 cup
- Yeast - 1 packet
Let's Get Started
- Dissolve the yeast in warm milk and a teaspoon of sugar.
- Mix the flour with half of the remaining sugar, add the yeast mixture, an egg and the butter. Knead to a smooth dough and let it rise for 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out the dough and place it in a greased baking dish.
- For the middle layer, mix the quark with two eggs, half of the remaining sugar, vanilla extract and lemon zest. Spread this mixture over the dough.
- For the top layer, melt the remaining butter, let it cool slightly, then mix with the remaining sugar and eggs. Pour this mixture over the quark layer.
- Bake the cake in the preheated oven for about 60 minutes. Let it cool before serving.
