Fried Milk
Leche Frita is a traditional Spanish dessert. It's a sweet, creamy milk pudding that's breaded and fried, then dusted with sugar and cinnamon.
Ingredients - Serves 4
- Cinnamon sugar - For dusting
- Vegetable oil - For frying
- Breadcrumbs - 1 cup
- Flour - 1 cup
- Eggs - 2, beaten
- Cinnamon stick - 1
- Lemon zest - 1 tablespoon
- Cornstarch - 1/2 cup
- Sugar - 1 cup
- Milk - 4 cups
Let's Get Started
- In a saucepan, combine the milk, sugar, cornstarch, lemon zest, and cinnamon stick. Bring to a boil over medium heat, stirring constantly until thickened.
- Pour the mixture into a square dish lined with plastic wrap. Let it cool, then refrigerate for at least 3 hours, or until set.
- Cut the set milk mixture into squares. Dip each square in the beaten eggs, then coat in flour, and finally in breadcrumbs.
- Heat the vegetable oil in a frying pan over medium heat. Fry the milk squares until golden brown on all sides.
- Drain the fried milk on paper towels, then dust with cinnamon sugar before serving.
