Creamy Polenta
This creamy polenta is a comforting side dish made from cornmeal and topped with butter and cheese.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Butter - 4 tablespoons
- Polenta or yellow cornmeal - 1 cup
- Salt - 1 teaspoon
- Water - 4 cups
Let's Get Started
- In a large pot, bring the water to a boil. Add the salt.
- Slowly whisk in the polenta or cornmeal, making sure there are no lumps.
- Reduce the heat to low and continue to whisk the polenta until it starts to thicken, about 5 minutes.
- Cover the pot and let the polenta cook for 30 minutes, stirring every 10 minutes to prevent it from sticking to the bottom of the pot.
- Remove the pot from the heat and stir in the butter and Parmesan cheese until well combined.
- Serve the polenta warm, topped with extra butter and cheese if desired.
