Let's Get Started

  1. Wearing gloves, blanch the stinging nettles in boiling water for 2 minutes. Drain and rinse under cold water.
  2. Squeeze out the excess water and puree the nettles in a food processor.
  3. Boil the potatoes until tender, then peel and mash them.
  4. Mix the mashed potatoes, nettle puree, egg, flour, and salt together in a bowl.
  5. Roll the dough into ropes and cut into small pieces to form the gnocchi.
  6. Boil the gnocchi until they float to the surface, then drain.
  7. Melt the butter in a pan and saute the garlic until fragrant.
  8. Add the gnocchi to the pan and cook until golden brown.
  9. Serve the gnocchi with a sprinkle of grated Parmesan cheese.
