Stinging Nettle Gnocchi

Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Garlic - 2 cloves, minced
- Butter - 4 tablespoons
- Salt - 1 teaspoon
- All-purpose flour - 2 cups
- Egg - 1
- Russet potatoes - 2 large
- Stinging nettles - 1 pound
Let's Get Started
- Wearing gloves, blanch the stinging nettles in boiling water for 2 minutes. Drain and rinse under cold water.
- Squeeze out the excess water and puree the nettles in a food processor.
- Boil the potatoes until tender, then peel and mash them.
- Mix the mashed potatoes, nettle puree, egg, flour, and salt together in a bowl.
