Pumpkin Gnocchi
Delicious and fluffy pumpkin gnocchi, perfect for a comforting autumn meal.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Sage leaves - 10
- Butter - 4 tablespoons
- Salt - 1 teaspoon
- All-purpose flour - 2 cups
- Egg - 1
- Russet potato - 1 large, cooked and mashed
- Pumpkin puree - 2 cups
Let's Get Started
- In a large bowl, combine the pumpkin puree, mashed potato, egg, flour, and salt. Mix until a dough forms.
- On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope, then cut into 1-inch pieces.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain.
- In a large skillet, melt the butter over medium heat. Add the sage leaves and cook until crispy.
- Add the cooked gnocchi to the skillet and toss to coat in the butter and sage. Cook for a few minutes until the gnocchi are golden brown.
- Serve the gnocchi with a sprinkle of grated Parmesan cheese.
