  1. In a large bowl, combine the pumpkin puree, mashed potato, egg, flour, and salt. Mix until a dough forms.
  2. On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope, then cut into 1-inch pieces.
  3. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain.
  4. In a large skillet, melt the butter over medium heat. Add the sage leaves and cook until crispy.
  5. Add the cooked gnocchi to the skillet and toss to coat in the butter and sage. Cook for a few minutes until the gnocchi are golden brown.
