Corn Chowder
This creamy and comforting corn chowder is packed with sweet corn, potatoes, and bacon.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Frozen corn - 3 cups
- Chicken broth - 4 cups
- Potatoes - 3 medium, peeled and diced
- Garlic - 2 cloves, minced
- Celery - 2 stalks, diced
- Onion - 1 medium, diced
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion, celery, and minced garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Using an immersion blender or a regular blender, blend about half of the soup until smooth. This will help thicken the chowder.
- Add the frozen corn and heavy cream to the pot. Season with salt and pepper to taste. Simmer for another 5 minutes.
- Serve the corn chowder hot, garnished with the crispy bacon and chopped fresh parsley.
