Corn and Cheese Quesadilla
A delicious and easy to make quesadilla filled with sweet corn and melted cheese. Perfect for a quick lunch or dinner.
Ingredients - Serves 4
- Sour cream - For serving
- Salsa - For serving
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Flour tortillas - 8
- Cheddar cheese - 2 cups, shredded
- Corn kernels - 1 cup, fresh or frozen
Let's Get Started
- Heat a large skillet over medium heat and melt the butter.
- Add the corn to the skillet and cook until it's heated through, about 5 minutes. Season with salt and pepper.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheese and a quarter of the corn. Top with another tortilla.
- Cook until the bottom tortilla is golden and the cheese is starting to melt, about 2 minutes.
- Flip the quesadilla and cook until the other side is golden and the cheese is fully melted, about 2 more minutes.
- Repeat with the remaining tortillas, cheese, and corn.
- Cut the quesadillas into wedges and serve with salsa and sour cream.
