Corn and Cheese Quesadilla

Ingredients - Serves 4

Let's Get Started

  1. Heat a large skillet over medium heat and melt the butter.
  2. Add the corn to the skillet and cook until it's heated through, about 5 minutes. Season with salt and pepper.
  3. Place a tortilla in the skillet and sprinkle with a quarter of the cheese and a quarter of the corn. Top with another tortilla.
  4. Cook until the bottom tortilla is golden and the cheese is starting to melt, about 2 minutes.
  5. Flip the quesadilla and cook until the other side is golden and the cheese is fully melted, about 2 more minutes.
  6. Repeat with the remaining tortillas, cheese, and corn.
  7. Cut the quesadillas into wedges and serve with salsa and sour cream.
