Let's Get Started

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside.
  2. Season the chicken thighs with salt and pepper. In the same pot, brown the chicken thighs on both sides. Remove the chicken and set aside.
  3. Add the chopped onion, sliced carrots, minced garlic, and sliced mushrooms to the pot. Cook until the vegetables are softened.
  4. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes.
  5. Pour in the red wine, strong brewed coffee, and chicken broth. Add the thyme, bay leaf, and reserved bacon. Stir to combine.
  6. Return the chicken thighs to the pot. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1.5-2 hours, or until the chicken is tender and the flavors have melded together.
  7. Remove the bay leaf and discard. Taste and adjust the seasoning with salt and pepper, if needed.
  8. Serve the Coq au Vin Coffee hot, garnished with fresh thyme leaves. Enjoy!
