Coq Au Vin Coffee
This unique twist on the classic French dish combines the flavors of coq au vin with the richness of coffee.
Ingredients - Serves 2
- Butter - 2 tablespoons
- Flour - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Chicken broth - 1 cup
- Strong brewed coffee - 1 cup
- Red wine - 1 cup
- Mushrooms - 8 ounces, sliced
- Garlic - 3 cloves, minced
- Carrots - 2, sliced
- Onion - 1, chopped
- Bacon - 4 slices, chopped
- Chicken thighs - 4
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside.
- Season the chicken thighs with salt and pepper. In the same pot, brown the chicken thighs on both sides. Remove the chicken and set aside.
- Add the chopped onion, sliced carrots, minced garlic, and sliced mushrooms to the pot. Cook until the vegetables are softened.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes.
- Pour in the red wine, strong brewed coffee, and chicken broth. Add the thyme, bay leaf, and reserved bacon. Stir to combine.
- Return the chicken thighs to the pot. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1.5-2 hours, or until the chicken is tender and the flavors have melded together.
- Remove the bay leaf and discard. Taste and adjust the seasoning with salt and pepper, if needed.
- Serve the Coq au Vin Coffee hot, garnished with fresh thyme leaves. Enjoy!
