Colcannon
Colcannon is a traditional Irish dish made with mashed potatoes, cabbage or kale, and butter.
Ingredients - Serves 4
- Green onions - 4, thinly sliced
- Pepper - To taste
- Salt - To taste
- Milk - 1/2 cup
- Butter - 1/2 cup
- Cabbage - 1/2 head, shredded
- Potatoes - 2 pounds, peeled and cubed
Let's Get Started
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
- In a separate pot, cook the shredded cabbage in boiling water for 5 minutes, then drain.
- Mash the cooked potatoes with butter and milk until smooth and creamy.
- Stir in the cooked cabbage and green onions. Season with salt and pepper to taste.
- Serve hot as a side dish with your favorite main course.
