Cocido Madrileño
Cocido Madrileño is a traditional chickpea-based stew from Madrid. It's a hearty and comforting dish perfect for cold days.
Ingredients - Serves 6
- Noodles - 100 grams
- Salt - To taste
- Onion - 1, chopped
- Garlic - 4 cloves, minced
- Carrots - 2, peeled and chopped
- Potatoes - 4, peeled and chopped
- Cabbage - 1/2, chopped
- Chicken - 1/2, cut into pieces
- Morcilla (spanish blood sausage) - 2 pieces
- Chorizo - 2 pieces
- Pork belly - 250 grams
- Beef shin - 500 grams
- Chickpeas - 500 grams, soaked overnight
Let's Get Started
- Place the chickpeas, beef shin, pork belly, chorizo, morcilla, and chicken in a large pot. Cover with water and bring to a boil.
- Reduce the heat and simmer for 2 hours, skimming off any foam that rises to the surface.
- Add the cabbage, potatoes, carrots, garlic, onion, and salt. Continue to simmer for another hour.
- In a separate pot, cook the noodles in boiling water until al dente.
- Serve the cocido in two parts: first the broth with the noodles, then the meat and vegetables.
