Classic Pea Soup

Ingredients - Serves 6

Let's Get Started

  1. Rinse the dried green peas and soak them in water overnight. Drain before using.
  2. In a large pot, heat some olive oil over medium heat.
  3. Add the chopped onion, diced carrots, diced celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
  4. Add the soaked green peas, diced ham, bay leaf, thyme, salt, and pepper. Stir well to combine.
  5. Pour in the vegetable broth and water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the peas are soft and tender.
  6. Remove the bay leaf from the soup.
  7. Using an immersion blender or a regular blender, puree about half of the soup until smooth. This will give the soup a creamy texture while still leaving some chunky bits.
  8. Return the pureed soup to the pot and stir well to combine.
  9. Simmer for an additional 10 minutes to allow the flavors to meld together.
  10. Serve hot, garnished with fresh parsley.
